This recipe is simple and from one of my go to sites.

1/4 veg stock
1 yellow onion, sliced
Salt and pepper
4 cups cauliflower – 1 medium head of cauliflower
3 cups unsweetened almond milk – I actually used full fat milk
3 cups broccoli florets, finely chopped
1 tablespoon onion powder

Using a large pan, finely chop onion and soften it in the veg stock.
Add cauliflower and milk. Bring to boil and then simmer for 10 mins.
Then add half the broccoli. After allowing the broccoli to soften a little purée the mixture.
Add the remaining broccoli and onion powder, simmer for 10 mins then serve.
