This recipe is from Comfy Belly and slightly adapted.

Breakfast cookies

2.5 cups of almond flour
1/2 t salt
1/2 t baking soda
8 T butter melted
1/2 cup maple syrup
1 egg whisked
1 ripe banana
1 cup crushed walnuts
1 cup of currants

Mix dry ingredients. Add wet ingredients.
Drop a T spoon of batter per cookie on cookie sheet.
Bake 350 for 15 mins.

Comfy belly suggested chilling the batter first before placing on cookie sheet. Also if you desire a crunchier cookie, leave them in the oven after cooking for 10 mins and turning the oven off.
I fitted a dozen cookies on each baking sheet.

I calculated them at 9.58 carbs each.



Second batch is slightly browner after sitting in the oven for ten minutes (oven turned off).
