Beef brisket with mashed potatoes and Kale.

Beef brisket recipe from nomnom paleo recipe.

4.5 lb of grass fed beef brisket
2 medium sweet potatoes, peeled and cut in large cubes
1/2 pound chopped carrots
2 T red curry paste
1 tin coconut milk
2 T coconut aminos
1 T fish sauce
2 T apple sauce

Put the sweet potatoes and carrots on the bottom of the slow cooker. Place meat on top.
In a small pan add the curry paste and coconut milk, stir until combined.
Add aminos, fish sauce, apple sauce and bring to a simmer.
Pour over meat and cook on low for 8-10 hours.

Once the meat is cooked remove to a carving dish. Meanwhile add a whole bag of kale to the sauce left in the crockpot. Allow the kale to cook.

Serve.
