I had four bananas to use up as they were well past the point of my children eating them.
I turned to glutenfreegus to see what he had created in terms of banana bread.
I found a Vegan Banana Bread.
I didn’t want to use coconut oil as the one I have is overwhelming in it’s flavour. So I subbed it with butter – hence vegan no more.


I also forgot that I didn’t have any sorghum flour so I used rice flour instead.
I did not add any cinnamon or nuts.
I doubled the recipe and added Enjoy Life chocolate chips to one of the loaves.



I don’t think I cooked this one for long enough and it sank in the middle.
All in all it tasted pretty good.
