Whilst my oldest son is not gluten free he loves cheesecake and it is so easy to just make the crumb base gluten free. No-one will ever know.

I got my basic recipe from

I used Trader Joe’s gluten free ginger snaps for the base.
I used arrowroot as the thickener in the cake. The Greek yoghurt was fat free.
Next time I will cook it for 95 mins.

I cut the cake into 12 slices and each slice was approx 36 carbs.
