2 lb ground turkey
1/4 cup onion
1/4 cup celery
1/4 cup carrot
A little sprinkle of salt, pepper, sage, parsley.
Bake at 400 for 30-40 mins

In a small food processor blend the 3 veg together. Then sauté them in a cast iron pan until lightly cooked.
Add the veg to the turkey and herbs in a large bowl. Incorporate all ingredients together well using you hands. Roll into balls.
Each meatball was approx 1/4 cup and I got over
two dozen.

I will freeze these for snacks or dinners for my children when I’m not home.
