1/4 cup or less of ghee
1 large onion chopped
4 carrots, peeled, cut into 1/2-inch pieces (about 2 cups)
4 parsnips, peeled, cut into 1/2-inch pieces (about 2 cups)
3 cups homemade chicken broth
3 large red potatoes peeled and cut into 1/2-inch pieces (about 2 cups)
1/4 cup chopped fresh parsley
1 teaspoon fresh thyme
1/4 cup white wine

1 1/4 cups what ever milk or cream combination you prefer

Sauté onions in ghee until soft. Add all ingredients except the milk.

Simmer for 20 mins until all ingredients are soft. Purée half (to leave a little chunky) or all the soup.
Stir in milk and any additional broth to thin out as desired.

Serve.
