1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/4cup honey
2 T hot water as needed
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips – melted
1 tsp vanilla

Mix everything above in a medium bowl. Let chill in the refrigerator for half an hour. Once chilled, roll into balls or roll flat between two pieces of parchment paper and cut into squares.
Wrap and refrigerate.
Next time I will add less coconut and I will use almond butter.
