This is another recipe from my new favourite site healthfulpursuit.com

2 medium potatoes
2 carrots
1 medium zucchini
1 cup cooked chickpeas
2 T dried dill
2 T oil
4 kale leaves
Little dried parsley
2 t apple cider vinegar
1/4 t garlic powder

Chop all veg and spread with oil and dill in a baking dish. Roast for 25 mins 375

Add kale and cook further 5 mins.

Add remaining ingredients and serve.
