In my search for all things healthy I came across these cupcakes.
Slightly adapted from cupcakeproject.com
They also hit the bulls eye because I calculated them as below 10 carbs each. This means my T1D son can have one as an afternoon treat without having to worry about their carb content. And I can eat a gluten free snack.

1 1/2 cups Almond Flour
1/2 t salt
1/2 t baking soda
1/2 t cinnamon
1/2 t nutmeg
1/4 t cardamom
3 eggs
1/4 cup applesauce
1 T honey
2 T grape seed oil
1 1/2 cups grated carrots
1/2 cup chopped dates

Combine first six ingredients in a bowl.
Whisk eggs and add applesauce and honey. Add carrots and dates.
Stir wet into dry and divide between 12 cupcake liners.
Bake at 325 for about 20 mins.

I added some frosting but I honestly don’t think they needed it.

8oz cream cheese
1/2 t vanilla essence
1 T sugar free syrup (this was too much – way too sweet)
Whisk all together and chill.
