I have a large slow cooker that you can use the pan on the stove top and them transfer straight to the slow cooker. I love this and saves me so much time.

In a little oil sauté 2-3 onions until golden.
4 cloves of garlic
2 inch ginger grated
2 t cumin
11/2 t cayenne pepper
11/2 t turmeric
2 cups of veg broth
3-4 lb boneless leg of lamb
Cook on low for 8 hrs or high for 4 hours.
Remove lamb and cube. Remove any fatty bits. Return lamb to pot.
6 cups baby spinach and stir – 5 mins
When ready to serve add 11/2 cups of plain yoghurt.


Rinse two cups of white rice and cook to instruction. Add a tin of coconut milk and fluff up before serving.


Break cauliflower into pieces and place in 9×13 Pyrex dish. Sprinkle with curry powder and a little veg broth. Bake at 400 for 30 mins.


Absolutely delicious.
