1/4 cup coconut flour
1/2 cup almond butter
6 pitted dates (soaked in warm water for 15 minutes)
1/2 cup unsweetened apple sauce
2 eggs whisked
1 1/2 t ginger
1 t vanilla extract
1/4 t sea salt
1/2 t baking soda
2 T dried cranberries
3 T currants

Oven 350 degrees.
Combine the coconut flour, almond butter, and dates in a food processor or blender.
Add applesauce, eggs, ginger, vanilla, salt and baking soda and process for 30 seconds until a wet dough forms.
Add in the remaining ingredients and stir gently.
Place the dough in spoonfuls onto a baking sheet lined with parchment paper. This quantity will make 12 cookies.
These cookies will not spread or rise so make sure to make them the shape you want them prior to baking.
Bake for 12 mins at 350.
Serve immediately or freeze.
