Dry rub for pork chops

1 T smoked paprika
1 T garlic powder
1 T onion powder
1 T sea salt
1/2 T dry mustard
1/2 T dry basil
1 t cayenne pepper
1/2 t black pepper

3 racks of pork back ribs rinsed and patted dry. Cover with rub and wrap in tin foil. Leave to marinate as long as possible, 30 mins minimum.
Cook at 200 degrees for 31/2 hrs. Leave to sit as long as possible. When ready to eat unwrap and grill or broil for 10 minutes.

No potato salad

1 head of cauliflower lightly cooked and cubed
2 stalks of celery diced
2 hard boiled eggs chopped
Mixed with homemade mayonnaise

1 egg
1 T apple cider vinegar
1/2 teaspoon mustard
1/2 salt
1/8 cayenne pepper
Blend together then very slowly add
1 cup olive oil

Quinoa and kale salad

Fry in a large pan
1/2 onion chopped
4 gloves garlic
Add
3 cups chopped kale for 1 minute
Splash of apple cider vinegar
1/2 cup Parmesan cheese
1 T parsley
1/2 sun-dried tomatoes chopped
Stir and cook 2 mins
Add
5 cups cooked quinoa
Add
4 eggs whisked
A little water to moisten if needed
Stir and serve
