1 onion chopped
1 large carrot chopped
48oz chopped tinned toms
1 T chopped thyme
1 tin of coconut milk ( could use chicken stock as much as needed)

In a large pan fry onion and carrot in a little oil or butter or ghee until soft
Add rest of ingredients, bring to a boil then simmer for 20 mins
Purée with hand blender
Serve and eat
