1 cup quinoa cooked
8 oz chopped spinach
1 cup cottage cheese (I used non fat)
2 eggs whisked
1 t curry powder
S & P
Mix and place in 9″ lined tin.
Bake 350 for 30 ish mins


Roast cauliflower
Drizzle with olive oil and lemon juice
Add a little garlic salt
Bake 350 40 mins.


4 lbs chicken breast and thighs
frozen veg, peppers, carrots, greens beans
1 tin of tom sauce
3 T hot sauce
1 t cumin
1 t thyme
1/2 t powdered garlic

Cook for 4-6 hrs in crock pot.
